Wet Ingredients
  • 1/2 cup vegetable oil Can substitute half with unsweetened applesauce for lower fat.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Additional Ingredients
  • 1 1/2 cups grated zucchini About 1 medium-sized zucchini; make sure to squeeze out excess moisture.
  • 1/2 cup chocolate chips Optional addition.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it lightly with oil or lining it with parchment paper.
  2. Grate the zucchini using a box grater or food processor, then squeeze out any excess moisture with a clean kitchen towel or cheesecloth.
  3. In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  4. In another large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Add the eggs and vanilla extract, and beat until well mixed.
  5. Fold the grated zucchini into the wet ingredients, then gradually add the dry ingredients, stirring until just combined. Fold in chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
