Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it lightly with oil or lining it with parchment paper.
- Grate the zucchini using a box grater or food processor, then squeeze out any excess moisture with a clean kitchen towel or cheesecloth.
- In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
- In another large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Add the eggs and vanilla extract, and beat until well mixed.
- Fold the grated zucchini into the wet ingredients, then gradually add the dry ingredients, stirring until just combined. Fold in chocolate chips if using.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
