  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped fresh strawberries Fresh strawberries preferred
For the Cream Cheese Frosting
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk Adjust for desired consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, cocoa powder, baking soda, and salt. Whisk until well blended and set aside.
  3. In a large mixing bowl, beat softened butter and sugar together until light and fluffy—approximately 2-3 minutes.
  4. Add the egg and vanilla extract, mixing until fully combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped strawberries.
  7. Scoop tablespoons of cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Place cookies in the preheated oven and bake for 10-12 minutes.
  2. Once baked, allow them to cool on the sheet for a few minutes before transferring to a wire rack.
Frosting Preparation
  1. In a separate bowl, blend softened cream cheese and powdered sugar, adding milk until desired consistency.
Assembly
  1. Once the cookies are fully cooled, drizzle the cream cheese frosting over them.
  2. Let it set before enjoying!

Notes

For the best flavor, use high-quality cocoa powder and be cautious not to overmix the dough. If fresh strawberries aren't available, frozen ones can be used after thawing and drying.
