Preparation
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large mixing bowl, combine ricotta cheese, granulated sugar, and vanilla extract. Beat well until smooth.
- Add the eggs to the ricotta mixture, one at a time, mixing well after each addition.
- In a separate bowl, sift together the cocoa powder, flour, and baking powder.
- Gradually fold the dry mixture into the wet ricotta mixture until everything is combined, being careful not to overmix.
- If using, gently fold in the chocolate chips.
Baking
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before serving.
Notes
Serve with a scoop of vanilla ice cream or whipped cream. Enjoy with fresh berries or a drizzle of chocolate sauce for added flavor.
