Preparation
- If using a frozen pre-made tart shell, remove it from the freezer and allow it to thaw according to package instructions.
- Preheat your oven to 350°F (175°C).
Making the Filling
- In a medium saucepan over low heat, combine the chopped dark chocolate and heavy cream. Stir continuously until the chocolate is completely melted and the mixture is smooth.
- Remove from heat and stir in the sugar and vanilla extract until fully incorporated.
Assembling and Baking
- Pour the chocolate mixture into the pre-made tart shell. Use a spatula to spread it evenly.
- Gently place the fresh raspberries on top of the chocolate filling, pressing them in slightly to ensure they stick.
- Place the tart in the preheated oven and bake for about 10-15 minutes, just until the edges of the chocolate start to set but the center remains soft.
- Remove the tart from the oven and allow it to cool at room temperature.
- Once cooled, refrigerate for at least one hour before serving.
Serving
- Slice the tart and serve chilled or at room temperature, possibly with a dollop of whipped cream if desired.
Notes
Make sure to allow the tart some time in the refrigerator to set properly before serving; this enhances the flavors and helps achieve a well-defined slice. Store leftovers in the refrigerator for up to three days, or freeze before topping with raspberries for up to a month.
