Preparation
- Place the pre-made chocolate pie crust in the fridge while you make the filling.
- In a mixing bowl, beat together the softened cream cheese and melted dark chocolate until smooth.
- In another bowl, whip the heavy cream until it begins to thicken. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture until fully combined.
- Pour the chocolate cream filling into your prepared pie crust, smoothing the top with a spatula.
- Evenly distribute the fresh raspberries on top of the chocolate filling, pressing them in slightly.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours (or overnight) to set.
- Once set, slice your pie, serve with an extra dollop of whipped cream, and enjoy!
Notes
For substitutions, use semi-sweet chocolate instead of dark chocolate for a richer flavor, or mascarpone cheese if cream cheese isn't preferred. Allow ample chilling time for setting, and be gentle when folding to maintain the airy texture.
