Ingredients
  

For the Peanut Butter Mixture
  • 1 cup peanut butter (smooth or crunchy) Use natural for a healthier version.
  • 1/2 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
For the Chocolate Coating
  • 1 cup chocolate chips (dark or semi-sweet)

Preparation
  1. Gather all the ingredients, and in a mixing bowl, combine the peanut butter, powdered sugar, graham cracker crumbs, salt, and vanilla extract. Mix until fully combined and smooth.
  2. In a microwave-safe bowl, place the chocolate chips. Microwave in 30-second intervals, stirring in between, until melted and smooth. This usually takes about 1 to 1.5 minutes in total.
  3. Scoop out a portion of the peanut butter mixture (about 1 tablespoon) and shape it into a ball, then flatten it slightly to create a disc. Repeat for all the mixture, placing the discs on a parchment-lined baking sheet.
  4. Dip each peanut butter disc into the melted chocolate, making sure to coat it fully. Use a fork to lift them out and allow excess chocolate to drip off before placing them back on the parchment-covered sheet.
  5. Once all the discs are coated, place the baking sheet in the refrigerator for about 15-20 minutes or until the chocolate is hard.
  6. Once set, stack your delectable treats and serve chilled. Enjoy!

Notes

Ensure that your chocolate is melted smoothly. If it starts to harden, simply reheat gently until it’s back to that desirable silky state. Store in an airtight container in the fridge for up to a week or freeze properly wrapped for longer storage.
