Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy. This usually takes about 2-3 minutes.
- Add the eggs one at a time and mix in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt until well-mixed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Resist the urge to overmix!
- In a separate bowl, mix creamy peanut butter with powdered sugar until smooth and well combined.
Assembly and Baking
- Scoop a tablespoon of chocolate dough onto a baking sheet lined with parchment paper.
- Make a small indentation in the center, add about a teaspoon of the peanut butter filling, then cover with another tablespoon of chocolate dough.
- Bake in the preheated oven for 12-15 minutes or until the edges are set but the middle remains soft.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
Store in an airtight container at room temperature for about 3-5 days. For longer storage, freeze for up to 3 months. Reheat for a few seconds in the microwave or let them come to room temperature.
