Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, cocoa powder, baking soda, and salt. Set aside.
Mixing
- In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, vanilla extract, and peppermint extract to the sugar mixture, mixing well until combined.
- Gradually incorporate the dry ingredients into the wet mixture, mixing until no flour streaks remain.
- Fold in the chocolate chips and mint chocolate chips, if using, until evenly distributed throughout the dough.
Baking
- Scoop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are set but the centers remain soft, then remove from the oven.
Cooling
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for about 30 minutes to help cookies maintain their shape. Experiment with extracts for different mint flavor balances. Watch baking time to prevent over-baking.
