  • 1 cup semi-sweet chocolate chips Choose high-quality chocolate for better flavor.
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup mascarpone cheese Can substitute with cream cheese or Greek yogurt.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Can use gluten-free flour for a gluten-free option.
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper for easy removal.
  2. In a medium saucepan over low heat, combine the butter and chocolate chips. Stir continuously until both are melted and smooth. Remove from heat and let it cool slightly.
Mixing Ingredients
  1. Add the granulated sugar and mascarpone cheese to the melted chocolate mixture. Blend until it’s all incorporated and creamy.
  2. Next, crack in the eggs, one at a time, mixing thoroughly after each addition. Then, stir in the vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
Baking
  1. Pour the brownie batter into your prepared baking dish, smoothing out the top with a spatula. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  2. Let the brownies cool in the pan for at least 10 minutes before lifting them out and cutting them into squares. Enjoy your delicious creation!

Notes

Store brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 3 months.
