Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla to the dry ingredients, mixing just until combined.
- Carefully stir in the boiling water.
- Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool in the pan for 10 minutes, then transfer to a cooling rack.
Decoration
- Once cooled, frost with your favorite chocolate frosting or enjoy them plain.
Notes
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer freshness, freeze for up to three months.
