Preparation
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk them together until well combined.
- In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix just until combined. Do not overmix; a few lumps are okay.
- Gently fold in the chopped strawberries, being careful not to crush them.
- Evenly distribute the batter among the muffin cups, filling each about 2/3 full.
Baking
- Place the muffin tin in your preheated oven and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for about 10 minutes before transferring them to a wire rack.
Finishing Touch
- Melt the chocolate chips in a microwave or double boiler until smooth. Dip the tops of the cooled muffins into the melted chocolate, allowing the excess to drip off. Place them back on the wire rack to set.

Notes
Store in an airtight container at room temperature for up to 2-3 days, or freeze them for up to a month. To reheat, microwave for 15-20 seconds or warm in the oven at 350°F (175°C) for 5 minutes.
