Preparation
- Start by washing the blueberries gently under cool water. Pat them dry with a kitchen towel, ensuring there’s no water left, as this will hinder the chocolate from sticking.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
Dipping
- Working quickly, dip each blueberry in the melted chocolate, using a fork or toothpick to coat it evenly. Allow any excess chocolate to drip off.
- Line a baking sheet with parchment paper and place the chocolate-covered blueberries on it. If you’re adding toppings, sprinkle them on before the chocolate hardens.
Setting
- Pop the tray in the refrigerator for about 15-30 minutes, or until the chocolate is firm. Once set, they are ready to be enjoyed!
Notes
Store in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.
