Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peanut butter, honey (or maple syrup), oats, salt, and vanilla extract. Mix until well blended.
  3. Gently fold in the chocolate chips.
  4. Line an 8×8-inch baking dish with parchment paper and lightly grease it.
  5. Spread the mixture into the prepared baking dish, pressing it down firmly into an even layer.
  6. Bake for about 20 minutes, or until the edges are golden brown.
  7. Allow the bars to cool in the baking dish for at least 10 minutes before cutting into squares.

Notes

For nut allergies, substitute peanut butter with almond or sunflower seed butter. For chewier bars, underbake slightly, and avoid overmixing to prevent density.
