Ingredients
  

For the Bread
  • 3 pieces ripe bananas The riper, the better for sweetness
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can be substituted with 1/4 cup of unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend
  • 1/2 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until mostly smooth, leaving some lumps for texture.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Mix in the sugar, beaten egg, and vanilla extract until blended thoroughly.
  5. Sprinkle the baking soda and salt over the mixture and mix in the flour until just incorporated.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Unbaked batter can be frozen for up to 2 months; thaw in the fridge overnight before baking.
