Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until mostly smooth, leaving some lumps for texture.
- Stir the melted butter into the mashed bananas until well combined.
- Mix in the sugar, beaten egg, and vanilla extract until blended thoroughly.
- Sprinkle the baking soda and salt over the mixture and mix in the flour until just incorporated.
- Gently fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Unbaked batter can be frozen for up to 2 months; thaw in the fridge overnight before baking.
