  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs Egg replacements: 1/4 cup unsweetened apple sauce or flaxseed egg for vegan option.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup dried cherries Chop to preferred size; ensure they are halal-compliant.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the eggs and vanilla extract, mixing well until combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually incorporate the dry mixture into the wet mixture until combined.
  6. Fold in the chocolate chips and dried cherries until evenly distributed.
Baking
  1. Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking sheet, ensuring space between cookies.
  2. Bake for about 10-12 minutes, or until the edges are set.
  3. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. To enjoy later, let them thaw at room temperature or microwave for 10-15 seconds.
