Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter, softened Ensure at room temperature for easy creaming.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Spoon into measuring cup instead of scooping to avoid packing.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Extras
  • 1 cup dried cherries Dried cherries preferred for texture.
  • 1 cup chocolate chips Feel free to use semi-sweet or dark chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Fold in the dried cherries and chocolate chips evenly.
  7. Drop tablespoonfuls of dough onto ungreased baking sheets, leaving space for spreading.
Baking
  1. Bake for about 10-12 minutes, until edges are firm but centers are slightly soft.
  2. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. Optional toppings include icing or sea salt.
