Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the dried cherries and chocolate chips evenly.
- Drop tablespoonfuls of dough onto ungreased baking sheets, leaving space for spreading.
Baking
- Bake for about 10-12 minutes, until edges are firm but centers are slightly soft.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. Optional toppings include icing or sea salt.
