  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 ripe bananas mashed
  • 1 tsp vanilla extract
  • 1/2 cup hot water

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, add the granulated sugar, brown sugar, and vegetable oil. Beat in the eggs, one at a time, until combined. Stir in the mashed bananas and vanilla extract.
  4. Gradually incorporate the dry ingredients into the wet ingredients, alternating with hot water. Stir until just combined.
  5. Using an ice cream scoop or a spoon, fill each cupcake liner about 2/3 full with the batter.
Baking
  1. Place in the preheated oven and bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean.
  2. Once baked, allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Don't overmix the batter to avoid dense cupcakes. Ensure bananas are very ripe for optimal sweetness and flavor. Experiment with toppings like cream cheese frosting or powdered sugar.
