  • - Juice of 1 lime
  • - Zest of 1 lime
  • - 1/2 teaspoon salt
  • - 1/4 teaspoon black pepper

  • - 2 cups cooked white or brown rice
  • - 1 avocado sliced
  • - 1 cup cherry tomatoes halved

Instructions
 

  • **Marinate the shrimp**
  • In a mixing bowl, combine olive oil, minced chipotle pepper, chili powder, smoked paprika, garlic powder, lime juice, lime zest, salt, and black pepper. Add the shrimp and toss to coat. Let it marinate for 10–15 minutes.

  • Heat a large skillet or grill pan over medium-high heat. Add the shrimp in a single layer and cook for 2–3 minutes per side, or until pink and opaque. Remove from heat and set aside.
