Preparation
- In a large bowl, combine the rinsed black beans, cooked rice, corn, diced bell peppers, taco seasoning, and salsa. Mix well so all the ingredients are incorporated.
Assembling the Burritos
- Place a large flour tortilla on a clean flat surface. Spoon a generous amount of the filling onto the center of the tortilla. Sprinkle shredded cheese on top.
- Fold the sides of the tortilla inward, then roll from the bottom up tightly to form a burrito. Ensure the fillings are well-encased to avoid spills.
Cooking or Freezing
- If you’re freezing them, wrap each burrito in foil and place them in a freezer-safe bag or container. If cooking immediately, place them seam side down in a preheated skillet and cook over medium heat for about 3-4 minutes on each side until golden and crispy.
- Once cooked or reheated, top with slices of avocado and fresh cilantro before serving.
Notes
For substitutions, you can swap black beans for pinto beans or use quinoa instead of rice. To spice things up, consider adding jalapeños.
