Preparation
- Start by cooking your rice if you haven't already. Set it aside to cool slightly. Also, dice the onion and avocado, and drain and rinse the black beans.
Mixing the Filling
- In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, shredded cheese, diced onion, chili powder, cumin, salt, and pepper. Stir until everything is well mixed and the flavors meld together.
Assembling the Burritos
- Lay out a tortilla on a flat surface. Spoon a generous amount of the filling into the center. Fold the sides in and then roll from the bottom up, making sure everything is snug and secure.
Wrapping and Freezing
- Wrap each burrito in plastic wrap or aluminum foil to prevent freezer burn. Place them in a labeled freezer-safe bag or container, and freeze for up to three months.
Reheating
- When you’re ready to indulge in your burritos, remove one from the freezer, unwrap, and microwave for 2-3 minutes, or until heated through.
Notes
Feel free to add cooked chicken or beef to the burritos if desired. For storage, they can last up to three months in the freezer. Reheat in the microwave or oven for best results.
