Chilli Garlic Noodles
Chilli Garlic Noodles are a spicy, flavorful dish popular in Indo-Chinese cuisine, blending fiery chili peppers, aromatic garlic, and stir-fried noodles.
- Large pot for boiling noodles
- Wok or large skillet
- Cutting board and knife
Measuring cups and spoons
- Spatula or wooden spoon
- - 8 oz noodles chow mein, spaghetti, or similar
- - 2 tablespoons vegetable oil or sesame oil
- - 4–5 cloves garlic minced or finely chopped
- - 1–2 fresh chilies like red Thai chilies or serrano, finely chopped (adjust to taste)
- - 1 cup mixed vegetables sliced bell peppers, onions, carrots, cabbage, etc.
- - 2 tablespoons soy sauce regular or light
- - 1 tablespoon chili sauce such as Sriracha or chili garlic sauce, adjust to taste
- - 1 teaspoon vinegar or lime juice optional
- - Salt and black pepper to taste
- - Optional garnish: sliced green onions or sesame seeds
**Cook the noodles** Bring a large pot of salted water to a boil. Add noodles and cook according to package instructions until al dente. Drain, rinse under cold water to stop cooking, and set aside.
**Heat the wok** In a wok or large skillet over medium-high heat, warm the vegetable oil.
**Sauté garlic and chilies** Add the minced garlic and chopped chilies. Stir-fry for about 30 seconds to 1 minute, being careful not to let them burn.
**Add vegetables** Toss in the sliced vegetables. Stir-fry for 2–3 minutes, keeping them slightly crunchy.
**Combine noodles and sauce** Add the cooked noodles to the wok. Drizzle in soy sauce, chili sauce, and vinegar or lime juice (if using). Toss everything together for 1–2 minutes, ensuring the noodles are well coated and heated through. Season with salt and black pepper.
**Serve** Transfer the chilli garlic noodles to a serving plate. Garnish with sliced green onions or sesame seeds if desired.
