Ingredients

Main Ingredients
  • 4 cups cooked rice (preferably day-old for best results) Day-old rice is drier and makes the fried rice less mushy.
  • 3 tablespoons chili oil Adjust amount according to heat tolerance.
  • 3-4 cloves garlic, minced Use fresh garlic for the best flavor.
  • 2-3 stalks green onions, chopped Add fresh for a vibrant flavor.
  • to taste Salt Adjust according to personal preference.

Method

Preparation
  1. Start by gathering your cooked rice, garlic, green onions, and chili oil. Having everything ready will make the cooking process flow smoothly.
  2. In a large skillet or wok, heat the chili oil over medium heat.
  3. Add the minced garlic to the pan. Stir it continuously for about 30 seconds until you smell that intoxicating aroma. Be careful not to burn it.
  4. Gradually add your cooked rice to the skillet. Use a spatula to gently break up any clumps, ensuring each grain is coated with that beautiful chili oil.
  5. Sprinkle salt to taste and continue tossing the rice for about 3-5 minutes until crispy and evenly colored.
  6. Finally, add the chopped green onions, tossing them in for the last minute of cooking.
  7. Transfer your Chili Oil Fried Rice to a serving bowl and enjoy!

Notes

You can add toppings like chopped cilantro, sesame seeds, or peanuts for added crunch. Avoid overcrowding the pan if cooking large quantities.
