  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs Gluten-free breadcrumbs can be used.
  • 1/2 cup grated carrots
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • Olive oil for frying Enough to coat the bottom of the pan.

Method
 

Preparation
  1. Start by draining and rinsing the chickpeas under cold water. Then, in a large mixing bowl, mash the chickpeas with a fork until semi-smooth, leaving some chunky bits for texture.
  2. Add breadcrumbs, grated carrots, chopped bell pepper, chopped onions, minced garlic, cumin, paprika, salt, and pepper to the mashed chickpeas. Combine everything until well mixed.
  3. Using your hands, scoop out about 2 tablespoons of the mixture and form patties. Aim for a thickness of about 1 inch.
Cooking
  1. In a frying pan, heat a generous amount of olive oil over medium heat.
  2. When the oil is hot, carefully place the fritters in the pan. Fry for about 4-5 minutes on each side or until they are golden brown and crispy.
  3. Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
Serving
  1. Serve warm with your favorite dipping sauce or yogurt.

Notes

If the mixture feels too wet, add more breadcrumbs. If too dry, a splash of water can help bind the mix. Store cooled fritters in an airtight container for up to 3 days, or freeze for up to a month.
