Preparation
- Start by draining and rinsing the chickpeas under cold water. Then, in a large mixing bowl, mash the chickpeas with a fork until semi-smooth, leaving some chunky bits for texture.
- Add breadcrumbs, grated carrots, chopped bell pepper, chopped onions, minced garlic, cumin, paprika, salt, and pepper to the mashed chickpeas. Combine everything until well mixed.
- Using your hands, scoop out about 2 tablespoons of the mixture and form patties. Aim for a thickness of about 1 inch.
Cooking
- In a frying pan, heat a generous amount of olive oil over medium heat.
- When the oil is hot, carefully place the fritters in the pan. Fry for about 4-5 minutes on each side or until they are golden brown and crispy.
- Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
Serving
- Serve warm with your favorite dipping sauce or yogurt.
Notes
If the mixture feels too wet, add more breadcrumbs. If too dry, a splash of water can help bind the mix. Store cooled fritters in an airtight container for up to 3 days, or freeze for up to a month.
