Chicken with Boursin Sauce (Garlic and Fine Herbs)

Ingredients
  

  • For the Chicken
  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • For the Boursin Sauce
  • 1 package 5.2 oz Boursin Garlic & Fine Herbs cheese
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • For Garnish
  • Fresh parsley or chives chopped

Instructions
 

  • Step 1: Season and Sear the Chicken
  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Step 2: Make the Boursin Sauce
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Reduce the heat to medium and add the Boursin cheese, chicken broth, and heavy cream. Whisk until the cheese is melted and the sauce is smooth. Stir in the parsley and thyme.
  • Step 3: Simmer and Combine
  • Return the chicken to the skillet, spooning the sauce over the top. Simmer for 3-4 minutes to allow the flavors to meld and the chicken to heat through.
  • Step 4: Garnish & Serve
  • Garnish with fresh parsley or chives. Serve the chicken and sauce over pasta, rice, or mashed potatoes. Enjoy!
