  • 2 cups cooked chicken, shredded (from a halal source)
  • 1 package (9 oz) cheese tortellini Can substitute with spinach or mushroom tortellini.
  • 4 cups chicken broth (halal certified)
  • 2 cups spinach, chopped Avoid overcooking.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil For sautéing.

Cooking Steps
  1. In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional minute.
  3. Pour in the 4 cups of chicken broth and bring to a gentle boil.
  4. Add the shredded chicken and tortellini to the boiling broth. Cook for about 7-8 minutes, or until the tortellini is tender and floating to the top.
  5. Stir in the chopped spinach and Italian seasoning, letting it simmer for another 2-3 minutes. Season with salt and pepper to taste.
  6. Ladle the soup into bowls. Garnish with grated parmesan or fresh herbs for extra flavor.

Notes

Leftovers can be refrigerated for up to 3 days or frozen for 2-3 months. Reheat gently on the stovetop or in the microwave, adding broth or water if necessary.
