  • 2 lbs chicken thighs (bone-in or boneless) Bone-in or boneless depending on preference.
  • ¼ cup olive oil For marinating.
  • ¼ cup soy sauce (Halal-friendly)
  • 4 cloves garlic, minced Adds robust flavor.
  • 1 tablespoon ginger, grated Fresh ginger for best flavor.
  • 1 juice lime Juice of one lime.
  • 2 tablespoons honey For sweetness.
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Preparation
  1. In a large mixing bowl, whisk together the olive oil, soy sauce, minced garlic, grated ginger, lime juice, honey, salt, and black pepper.
  2. Add the chicken thighs to the marinade, ensuring each piece is generously coated. For enhanced flavor, let it marinate for at least 30 minutes or longer.
Cooking
  1. Preheat your oven to 400°F (200°C) or set your grill to medium-high heat.
  2. Place the marinated chicken thighs onto a baking tray or grill. Bake for about 35-40 minutes in the oven or grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. Once cooked, remove from the oven/grill and let it rest for a few minutes before serving.
Serving
  1. Pair with rice and your favorite veggies for a beautiful meal.

Notes

To store leftovers, keep in the refrigerator for up to 3 days in an airtight container. For longer storage, freeze for up to 3 months. Reheat in the oven at 350°F (175°C).
