  • 1 pound ground chicken
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup onion, diced
  • 1 cup bell pepper, diced

Method
 

Preparation
  1. In a large pot over medium heat, add the ground chicken. Stir occasionally until browned and cooked through for around 5-7 minutes.
  2. Add the diced onions and bell peppers, and continue to cook for another 3-4 minutes until they're just tender.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, and chicken broth. Sprinkle in the taco seasoning, and season with salt and pepper to your liking.
  4. Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes.
  5. Take a moment to taste your soup and adjust the seasoning if needed.
  6. Ladle the soup into bowls and add your favorite toppings such as shredded cheese, a dollop of sour cream, fresh avocado slices, and chopped cilantro.

Notes

For a lighter option, substitute ground chicken with ground turkey or a plant-based protein. For added heat, consider adding jalapeƱos or extra chili powder. Store leftovers in an airtight container for up to 3 days or freeze for up to 2-3 months.
