- In a large pot over medium heat, add the ground chicken. Stir occasionally until browned and cooked through for around 5-7 minutes.
- Add the diced onions and bell peppers, and continue to cook for another 3-4 minutes until they're just tender.
- Stir in the black beans, corn, diced tomatoes with green chilies, and chicken broth. Sprinkle in the taco seasoning, and season with salt and pepper to your liking.
- Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 10-15 minutes.
- Take a moment to taste your soup and adjust the seasoning if needed.
- Ladle the soup into bowls and add your favorite toppings such as shredded cheese, a dollop of sour cream, fresh avocado slices, and chopped cilantro.
Notes
For a lighter option, substitute ground chicken with ground turkey or a plant-based protein. For added heat, consider adding jalapeƱos or extra chili powder. Store leftovers in an airtight container for up to 3 days or freeze for up to 2-3 months.
