Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh oregano or 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Main Ingredients
  • 2 pounds chicken breast (cut into bite-sized pieces)
  • Vegetables: Tomatoes, cucumbers, and any other desired toppings

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  2. Add the chicken pieces to the marinade and mix well, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor.
  3. Heat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
Cooking
  1. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has lovely char marks.
  2. Remove the skewers from the grill and let them rest for a few minutes. Serve with warm pita bread and your choice of toppings.

Notes

For variations, try using chicken thighs for a juicier option or shrimp for a seafood twist. Ensure proper spacing on skewers for even cooking and avoid overcrowding on the grill. Store leftovers in an airtight container in the refrigerator for up to 3 days.
