Preparation
- In a bowl, combine olive oil and shawarma spice blend. Add chicken thighs and coat well. Allow marinating for at least 15 minutes for maximum flavor.
Cooking
- Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Remove and let rest for a couple of minutes.
- Cut the chicken into strips to make it easier to layer in your bowl.
Assembly
- In a serving bowl, add a base of cooked rice or quinoa. Top with slices of chicken, cucumbers, tomatoes, and lettuce. Drizzle generously with tahini sauce.
- Sprinkle with fresh parsley and, if using, add cooked chickpeas for an extra crunch. Enjoy!
