Ingredients
  

For the chicken marinade
  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons shawarma spice blend (cumin, paprika, turmeric, cinnamon, garlic powder, salt) or your preferred spice blend
For the bowl assembly
  • 1 cup cooked rice or quinoa
  • 1 cup chopped cucumbers
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup tahini sauce
  • to taste fresh parsley for garnish
  • optional cooked chickpeas for crunch

Method
 

Preparation
  1. In a bowl, combine olive oil and shawarma spice blend. Add chicken thighs and coat well. Allow marinating for at least 15 minutes for maximum flavor.
Cooking
  1. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Remove and let rest for a couple of minutes.
  2. Cut the chicken into strips to make it easier to layer in your bowl.
Assembly
  1. In a serving bowl, add a base of cooked rice or quinoa. Top with slices of chicken, cucumbers, tomatoes, and lettuce. Drizzle generously with tahini sauce.
  2. Sprinkle with fresh parsley and, if using, add cooked chickpeas for an extra crunch. Enjoy!

Notes

For serving, pair your Chicken Shawarma Bowl with garlic yogurt sauce, pita bread, or tabbouleh salad for added freshness. For drinks, try mint lemonade or a light white wine.
