  • 8 oz penne pasta Cook according to package instructions.
Main Ingredients
  • 2 pieces Chicken sausages (halal, sliced)
  • 3 tablespoons pesto (store-bought or homemade)
  • 1 medium onion (sliced)
  • 1 cup peas (fresh or frozen)
Cooking Essentials
  • 2 tablespoons olive oil

  • Parmesan cheese (optional, for topping)
  • Red chili flakes (optional, for some heat)

Method
 

Cook the Pasta
  1. Begin by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions, usually around 10-12 minutes, until al dente. Drain and set aside.
Caramelize the Onions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the sliced onions and a pinch of salt; cook slowly, stirring occasionally until the onions are golden brown and caramelized, about 15 minutes. Remove them from the skillet and set them aside.
Cook the Chicken Sausage
  1. In the same skillet, add another tablespoon of olive oil and the sliced chicken sausage. Sauté for about 5-7 minutes until they are browned and cooked through.
Combine & Add Peas
  1. Add the cooked penne pasta and peas into the skillet with the chicken sausage. Toss everything together, then add the caramelized onions and pesto. Mix until all ingredients are well combined and heated through.
Season & Serve
  1. Season with salt, pepper, and red chili flakes, if using. Serve hot, topped with optional Parmesan cheese for extra flavor.

Notes

Substitutions: If chicken sausage is not available, feel free to substitute it with turkey sausage or simply use grilled chicken. Timing: Ensure to caramelize the onions slowly; patience is key for achieving that sweet, rich flavor. Avoid overcooking the pasta; it should be perfectly al dente!
