  • 8 ounces pasta of your choice (like penne or rotini)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and sauté for about 5-7 minutes or until browned and cooked through.
  3. Once your sausage is cooked, add the minced garlic and cook for about 1-2 minutes until fragrant. Toss in the chopped spinach and stir until wilted.
  4. Add the drained pasta to the skillet, followed by a splash of reserved pasta water to create a cohesive sauce. Stir everything together and season with salt and pepper to taste.
  5. Remove from heat and stir in the grated parmesan cheese until melted and creamy.
  6. Plate the pasta dish, adding an extra sprinkle of cheese on top if desired, and enjoy your delicious creation!
