  • 1/2 cup celery, chopped
  • 1/2 cup walnuts or pecans, chopped Feel free to substitute with almonds if preferred.
  • 1/2 cup mayonnaise Greek yogurt can be used as a lighter substitute.
  • 1 tablespoon lemon juice Freshly squeezed is ideal.
  • Salt and pepper to taste
  • Lettuce leaves for serving Use your choice of lettuce.

Preparation
  1. If you haven't cooked your chicken yet, boil, bake, or grill it until fully cooked. Allow it to cool before shredding.
  2. Dice the apples and chop the celery and walnuts. Ensure the apple pieces are small enough to blend well with the chicken but large enough to provide a pleasant crunch.
  3. In a bowl, combine the mayonnaise, lemon juice, salt, and pepper. Stir well to create a smooth dressing.
  4. In a large mixing bowl, combine the shredded chicken, diced apples, chopped celery, and walnuts. Pour the dressing over the top and gently mix until everything is coated.
  5. Place clean lettuce leaves on a serving plate and scoop the chicken salad onto the leaves. Optionally, use a bowl for presentation.

Notes
