  • 1 cup orzo pasta
  • 1 lb cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can cream of chicken soup Ensure it's halal compliant
  • 2 cups chicken broth Ensure it's halal compliant
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional) For topping
  • Fresh parsley for garnish (optional)

Method
 

Cooking
  1. In a large pot over medium heat, bring 2 cups of chicken broth to a simmer.
  2. Add the orzo pasta, stirring occasionally, and allow it to cook for about 8-10 minutes or until al dente.
  3. Once the orzo is cooked, stir in the shredded chicken and frozen mixed vegetables.
  4. Pour in the can of cream of chicken soup, thyme, and garlic powder. Stir everything together until well combined. If needed, season with salt and pepper to taste.
  5. If you’re adding cheese, sprinkle it on top of the dish and allow it to melt for a few minutes.
  6. Remove the pot from the heat, garnish with fresh parsley if desired, and serve warm.

Notes

Make it your own by swapping out the mixed vegetables. Serve immediately to prevent the orzo from becoming mushy. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months. When reheating, add a splash of chicken broth to restore creamy texture.
