  • 2 cups cooked orzo pasta
  • 2 cups cooked and shredded chicken Ensure chicken is Halal-compliant.
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh) Drain excess liquid to avoid sogginess.
  • 1 cup shredded mozzarella cheese For a gooey topping.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil For greasing the baking pan.
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with olive oil.
  3. In a large mixing bowl, combine cooked orzo pasta, shredded chicken, chicken broth, diced tomatoes (with juices), garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until everything is evenly incorporated.
  4. Pour the mixture into your greased baking dish, ensuring it’s spread evenly.
  5. Sprinkle shredded mozzarella cheese on top to cover the entire surface.
Baking
  1. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is golden and bubbly.
Serving
  1. Remove from the oven and let cool slightly. Garnish with fresh parsley if desired and serve warm.

Notes

Swap chicken for vegetables or beans for a vegetarian version. Quinoa can substitute for orzo for a gluten-free option. Avoid overcooking orzo before mixing; it should be al dente since it will cook further in the oven.
