- In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper. Mix well, then add the chicken cubes. Toss until fully coated, cover, and let it marinate for at least 15-20 minutes in the refrigerator.
- While the chicken is marinading, chop your bell pepper, onion, and zucchini into bite-sized pieces to ensure they cook evenly.
- Take your skewers and alternate threading the chicken and veggies, beginning and ending with a piece of chicken for stability.
- Get your grill preheated to medium-high heat. If you’re using a stovetop grill pan, ensure it is adequately heated as well.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has beautiful char marks.
- Once done, remove the kabobs from the grill, and let them rest for a couple of minutes before serving.
Notes
For perfect kabobs, ensure your grill is hot enough before adding them to prevent sticking and promote a perfect sear. If desired, you can swap the chicken for lamb or beef, using only halal-friendly options.
