Ingredients
  

For the Chicken Marinade
  • 1 lb chicken breast, diced Use fresh chicken for the best flavor.
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For Serving
  • 2 cups cooked rice or pita bread
  • 1 cup lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup tzatziki sauce

Method
 

Preparation
  1. In a bowl, combine the diced chicken, olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Mix well to ensure the chicken is fully coated. Let it marinate for about 15 minutes while you prep the other ingredients.
Cooking
  1. In a large skillet over medium heat, add the marinated chicken. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
Assembly
  1. While the chicken is cooking, gather your serving ingredients. In each bowl, place a scoop of cooked rice (or warm pita bread) as a base.
  2. Top the rice with the cooked chicken, adding a generous amount of chopped lettuce, halved cherry tomatoes, and slices of red onion.
  3. Finish off the bowls with a dollop of tzatziki sauce. Serve immediately and watch everyone dig in!

Notes

You can use turkey instead of chicken for a different flavor profile. Make sure not to overcook the chicken to keep it juicy. Store leftovers in an airtight container; they will stay fresh for about 3 days.
