Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of mushroom soup, sour cream, cooked rice, shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.
- Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
- If you’re feeling adventurous, blend the crushed Ritz crackers with melted butter and sprinkle them over the top of the casserole for added crunch.
Baking
- Bake the casserole in the preheated oven for 30-35 minutes, or until it is hot and bubbly.
- Allow it to cool slightly before serving to avoid burning your tongue on that heavenly mixture!
Notes
Don’t hesitate to switch up the proteins! If you have leftover turkey or rotisserie chicken, those work just as well. If you want to make it lighter, you can use low-fat versions of sour cream and cream of mushroom soup without sacrificing too much flavor. Be cautious not to overbake the casserole; check it a few minutes before the 30-minute mark to ensure everything is heated through while maintaining the creaminess.
