Preparation
  1. Start by slicing your chicken breast, bell pepper, and onion. This will make the cooking process smooth and quick.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the sliced chicken.
  2. Sauté the chicken for about 5-7 minutes or until it’s golden brown and cooked through. Season with salt and pepper to taste halfway through cooking.
  3. Toss in the sliced bell pepper and onion. Continue to cook for another 3-5 minutes until the vegetables are tender.
  4. Sprinkle the fajita seasoning over the chicken and vegetables. Stir well to ensure everything is evenly coated. Let it cook for an additional minute.
Assembly
  1. Remove from heat and pile the mixture over cooked rice or fill tortillas. Garnish with fresh cilantro for added flavor.

Notes

You can customize the bowls with toppings like salsa and guacamole. Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze for up to a month. When reheating, add a splash of water to retain moisture.
