  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin

Preparation and Cooking
  1. In a large pot over medium heat, add a bit of olive oil. Once hot, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.
  2. Stir in the shredded chicken and mix well, allowing it to heat through for another 3 minutes.
  3. Pour in the black beans, corn, diced tomatoes (with their juice), and chicken broth. Stir to combine.
  4. Add the chili powder, cumin, salt, and pepper. Bring the mixture to a gentle boil.
  5. Reduce the heat and let the soup simmer for about 15-20 minutes, allowing all flavors to meld together beautifully.
  6. Ladle the soup into bowls and sprinkle with shredded cheese. Top with crushed tortilla chips, a dollop of sour cream, and fresh cilantro for a burst of freshness.

Notes

This soup can be customized with different toppings and ingredients according to preferences. It can be made vegetarian by omitting chicken and using vegetable broth.
