Ingredients
  

Chicken Mixture
  • 2 cups cooked chicken, shredded You can use rotisserie or boiled chicken
  • 1 cup mozzarella cheese, shredded
  • 1 cup cooked broccoli florets Fresh or frozen
  • 1 cup cream of chicken soup
  • 1 cup breadcrumbs Make sure they’re Halal-friendly
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper
  • 1 tbsp olive oil or melted butter For crispiness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked broccoli, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix well until combined.
Assembly
  1. In a casserole dish, layer half of the chicken mixture on the bottom. Sprinkle half of the mozzarella cheese evenly over this layer.
  2. Add the remaining chicken mixture and top with the rest of the mozzarella cheese.
  3. In a small bowl, mix the breadcrumbs with olive oil or melted butter. Spread this mixture evenly over the cheese layer to create a crispy topping.
Baking
  1. Place the casserole in the preheated oven and bake for 30 minutes, or until the top is golden brown and the casserole is bubbling.
  2. Let it cool for a few minutes before serving. This casserole is best enjoyed while still warm!

Notes

Ingredient substitutions: You can swap cooked chicken for turkey or even a vegetarian protein for a Halal-friendly version. Spinach can be used in place of broccoli for a different flavor profile. Avoid overcooking by checking the casserole around 25 minutes. Don’t skimp on seasoning for enhanced flavor.
