  • 2 cups cooked chicken, shredded You can use grilled or rotisserie chicken.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa Use your favorite type.
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • 8 pieces flour tortillas, cut into strips For a healthier option, consider whole grain or corn tortillas.
  • 2 tablespoons chopped cilantro (optional) Adds freshness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, taco seasoning, and half of the shredded cheese. Stir until well combined.
  3. In a greased baking dish, layer half of the tortilla strips along the bottom to create a crunchy base.
  4. Spoon the chicken mixture evenly over the tortilla base, spreading it out for even flavor distribution.
  5. Sprinkle the remaining tortilla strips on top of the filling and cover with the rest of the cheese.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  2. Once out of the oven, sprinkle with fresh cilantro if using, and let it sit for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat at 350°F (175°C) covered with foil for about 20 minutes.
