Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, taco seasoning, and half of the shredded cheese. Stir until well combined.
- In a greased baking dish, layer half of the tortilla strips along the bottom to create a crunchy base.
- Spoon the chicken mixture evenly over the tortilla base, spreading it out for even flavor distribution.
- Sprinkle the remaining tortilla strips on top of the filling and cover with the rest of the cheese.
Baking
- Place the casserole in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and golden brown.
- Once out of the oven, sprinkle with fresh cilantro if using, and let it sit for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat at 350°F (175°C) covered with foil for about 20 minutes.
