Ingredients
  

Main Ingredients
  • 8 oz ziti pasta Use whole wheat or gluten-free ziti as a healthier option.
  • 2 cups broccoli florets You can swap for other green vegetables like spinach or green beans.
  • 1 lb boneless, skinless chicken breasts, diced Ensure chicken is cooked through for safety.
  • 2 cups shredded mozzarella cheese Can add extra cheese for serving if desired.
  • 1 cup grated Parmesan cheese
  • 2 cups chicken broth Add additional broth when reheating if necessary.
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Pepper

Method
 

Cooking the Pasta and Broccoli
  1. Bring a large pot of salted water to a boil. Add ziti pasta and cook according to package instructions until al dente. During the last 2 minutes, add the broccoli florets to the boiling water with the pasta. Drain and set aside.
Preparing the Chicken
  1. In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, and bring to a simmer.
Combining Ingredients
  1. Add the cooked chicken and ziti/broccoli mixture back to the skillet. Stir to combine everything, then add in the shredded mozzarella and grated Parmesan cheese. Mix well until everything is coated in the creamy sauce.
Final Cooking
  1. Reduce the heat to low and cover the skillet. Let it cook for about 5 minutes to melt the cheese and bring everything to a satisfying temperature.
Serving
  1. Enjoy your Chicken Broccoli Ziti warm, garnished with fresh parsley or additional cheese if desired.

Notes

For storing, keep leftovers in an airtight container in the refrigerator for up to 3-4 days. The dish can be frozen for about 2-3 months.
