Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded You can use leftover chicken or rotisserie chicken.
  • 2 cups broccoli, chopped Chop the broccoli into bite-sized pieces for even cooking.
  • 2 cups cooked rice Use white or brown rice as preferred.
  • 1 can cream of chicken soup This adds creaminess and flavor to the casserole.
  • 1/2 cup milk Can be substituted with cream for a richer texture.
  • 1 teaspoon garlic powder For added flavor.
  • Salt and pepper to taste
Cheese Topping
  • 1 cup shredded cheddar cheese Divided into two portions for mixing and topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, chopped broccoli, cooked rice, cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until everything is well mixed and coated.
  3. Fold in half of the shredded cheddar cheese into the mixture.
  4. Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  5. Sprinkle the remaining shredded cheddar cheese generously over the top.
Baking
  1. Place the baking dish in the preheated oven and bake for about 30 minutes, or until heated through and the cheese is bubbly and golden.
  2. Once out of the oven, allow it to cool for a few minutes before serving.

Notes

For substitutions, try using turkey or cooked chickpeas for a vegetarian alternative. Store leftovers covered in the refrigerator for 3 to 4 days, or freeze for up to 2 months.
