Preparation
- Start by shredding your cooked chicken breast and mashing the ripe avocado in a separate bowl. Add salt and pepper to taste.
- In a mixing bowl, combine shredded chicken with mayonnaise.
Assembly
- Spread the mashed avocado on one slice of bread. On top of the avocado, add the chicken mixture and sprinkle shredded cheese. Top it off with the second slice of bread.
Grilling
- Spread a thin layer of butter on the outsides of the sandwich for that appealing golden crust when grilled.
- Heat a non-stick skillet or pan over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serving
- Once done, remove from the heat, slice in half, and enjoy immediately! Feel free to add any extra toppings as desired.
