  • 2 cups cooked chicken, shredded
  • 1 avocado, diced
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1/4 cup salsa
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup shredded cheese (optional)

Method
 

Preparation
  1. Start by shredding your cooked chicken and dicing the avocado. Make sure the rice is ready, and the beans are rinsed to avoid excess sodium.
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, corn, diced avocado, salsa, cumin, and a sprinkle of salt and pepper. Stir well until everything is nicely combined.
Cooking
  1. Warm the tortillas in a dry skillet over medium heat for about 20-30 seconds on each side to make them pliable.
  2. Lay a tortilla flat, and spoon a generous amount of the chicken mixture onto the center. If you’re using cheese, sprinkle some on top.
  3. Fold in the sides of the tortilla and then roll it tightly from the bottom up. Place seam-side down on a plate or baking dish.
  4. If you prefer, grill the burritos seam-side down for a couple of minutes until golden.
Serving
  1. Cut the burritos in half and serve hot with additional salsa or toppings of your choice.

Notes

You can substitute shredded chicken for ground turkey or beef. Optionally, use pinto beans instead of black beans. Ensure ingredients are prepped ahead of time for easier assembly. Avoid overstuffing burritos to ensure they wrap easily.
