- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, red onion wedges, and halved Brussels sprouts. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and dried thyme. Toss to coat the vegetables well.
- Spread the seasoned veggies evenly on a large sheet pan, leaving space in the middle for the sausages.
- Place the chicken apple sausages in the center of the pan among the vegetables.
- Bake for 25-30 minutes, shaking the pan halfway through for even cooking.
- Check that the sausages are browned and the vegetables are tender. If not, bake for a few extra minutes.
- Let the pan sit for a few minutes before serving. Plate and enjoy.
