Preparation
- Start by cutting your chicken breast into bite-sized pieces. Wash and chop the vegetables into similar-sized chunks so they cook evenly.
- In a large skillet, heat the olive oil over medium-high heat.
Cooking
- Add the chicken pieces to the skillet, season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked thoroughly (internal temperature should reach 165°F).
- Toss in the minced garlic and sauté for an additional minute until fragrant.
- Add the mixed vegetables to the skillet. Stir well and cook for another 5-7 minutes until the veggies are tender-crisp.
- Once everything is cooked through, taste and adjust seasonings if necessary. Serve immediately and enjoy with family!
Notes
For perfecting the Chicken and Veggies Skillet, feel free to swap out any of the vegetables with your favorites. Timing is key; overcooking the chicken can lead to dryness. You can also add a dash of lemon juice or a sprinkle of grated Parmesan just before serving.
