  1. Start by cutting your chicken breast into bite-sized pieces. Wash and chop the vegetables into similar-sized chunks so they cook evenly.
  2. In a large skillet, heat the olive oil over medium-high heat.
Cooking
  1. Add the chicken pieces to the skillet, season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked thoroughly (internal temperature should reach 165°F).
  2. Toss in the minced garlic and sauté for an additional minute until fragrant.
  3. Add the mixed vegetables to the skillet. Stir well and cook for another 5-7 minutes until the veggies are tender-crisp.
  4. Once everything is cooked through, taste and adjust seasonings if necessary. Serve immediately and enjoy with family!
