Preparation
  1. Begin by dicing the chicken breast, chopping the onion, and slicing the mushrooms. Mince the garlic for an aromatic base.
Cooking
  1. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until translucent and fragrant, about 2–3 minutes.
  2. Add the diced chicken breast to the skillet, and season with salt and pepper. Stir frequently until the chicken is cooked through and lightly browned, about 5–6 minutes.
  3. Next, toss in the sliced mushrooms and cook for an additional 4–5 minutes, allowing them to soften and release their flavors.
  4. Once the mushrooms are cooked, stir in the cooked rice and pour in the chicken broth. Mix everything well and bring it to a gentle boil. Reduce the heat and let it simmer for about 10 minutes.
  5. Taste and adjust the salt and pepper as needed. If you want more flavor, feel free to sprinkle a bit more seasoning!
  6. Finally, remove from heat, and garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

For substitutions, you can swap chicken for turkey or use a mix of vegetables for a vegetarian option. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months. Reheat in the microwave or on the stovetop with a splash of chicken broth.
