  • 2 cups cooked chicken, shredded
  • 1 ripe mango, diced Sweet and ripe for best flavor
  • 1 red bell pepper, chopped
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced (optional) Add for extra heat
  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired
  • 1 lime, juiced Freshly squeezed is best
  • to taste salt and pepper
  • 4 cups mixed greens or lettuce For serving

Method
 

Preparation
  1. Gather all your ingredients.
  2. Dice the mango, chop the red bell pepper, finely chop the red onion, and mince the jalapeño if using.
Mixing Ingredients
  1. In a large bowl, mix together the shredded chicken, diced mango, chopped red bell pepper, chopped red onion, and minced jalapeño.
  2. Gently fold in the chopped cilantro and squeeze the lime juice over the mixture.
  3. Season with salt and pepper to taste.
Serving
  1. Toss the ingredients together until well combined.
  2. Serve over a bed of mixed greens or lettuce and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Best enjoyed fresh. For optimal freshness, store salad components separately.
