Ingredients
  

For the Chicken and Broth
  • 1 lb chicken (boneless, skinless)
  • 4 cups chicken broth
For the Vegetables
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 1 cup frozen peas
For the Dumplings
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon butter melted
  • 1 cup milk
  • 1 teaspoon black pepper

Method
 

Preparation
  1. In a large pot, combine the chicken and chicken broth. Bring it to a gentle boil, then reduce the heat and let it simmer for about 20 minutes. Ensure the chicken is cooked through, then remove it, allowing it to cool slightly before shredding it into bite-sized pieces.
  2. In the same pot with the broth, add the sliced carrots, celery, and frozen peas. Let this simmer for about 10 minutes, allowing the veggies to soften.
  3. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. In another bowl, combine the melted butter and milk. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix!
  4. Once the vegetables are tender and the chicken is shredded, return the chicken to the pot. Gently drop spoonfuls of the dumpling batter into the simmering broth and veggies. Cover the pot and allow the dumplings to steam for about 12-15 minutes, or until they are fluffy and cooked through.
  5. Once the dumplings are done, ladle your delicious Chicken and Dumplings into bowls. Garnish with fresh herbs if desired, and enjoy!

Notes

For healthier options, swap chicken for turkey or add other veggies like corn or green beans. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat on the stovetop, adding broth as needed.
